Sometimes there is just NOTHING better than some good comfort food and that was the case this weekend. I was craving some chili - yes even WITH the 100 degree weather we were having here in Phoenix! Despite the heat I wanted some heat....in the form of some delicious, home cooked chili! I scrounged thru the cabinet and fridge and totally lucked out that I had everything I needed to make a giant, delicious, mouth-watering pot of it! I could literally eat half the pot of this in one sitting, it is sooooo good! Simple to make (just over 30 minutes) and sure to have all of your chili-lovers asking for a second helping!
Heat the oil over high heat in a large heavy pot and sautée diced onions, bell pepper and garlic until golden brown (about 5 minutes).
Once lightly browned, add ground turkey and cook over medium heat until browned (around 5-10 minutes). Liquefy 1 can diced fire roasted tomatoes in blender and add to pot, along with 28 oz can of crushed tomatoes, broth and all three cans of beans (after draining and rinsing). Mix in 3 Tbsp NOT TOM's. Bring to a boil and then reduce heat to a simmer, stirring occasionally for about 15 minutes. Add salt and pepper to taste. Serve in bowls and garnish with shredded cheddar cheese, diced green onions, sour cream and lime wedges, if desired. Enjoy!
